Samosa recipe

Samosa patti bananay kay liye:

Maida 1/2 kg
Ajwain 1 tsp
Namak hasb-e-zaiqa
Oil 2 tbsp
tamam ajza attay mein dal kar oil kay zarye achi tarah sakht gondh lein
thora pani mix karsakty hein magar khial rahay atta narm na ho
balkay sakht ho.
Filling k liye
---------------
Aaloo boiled
Piaaz bareek kati houi
Hari mirch bareek kutti houi 1 tsp
Lal dhara mirch (kutti howi) 1 tsp
Haldi 1/2 tsp
Namak Hasb-e-zaiqa
Zeera pisa 1tsp
Zeera sabut 1tsp
Garam masala 1tsp
Oil 2 tbsp
Sabut sookha dhania 1 tsp
hara dhania adhi gathi bareek kati howi
2 tbsp oil mein
sabat dhaniya dalein aur sabat zeera 1 minut bhoon lein
ab aanch halki karkay haldi namak mirch garam masala or baki masala daal lein
1 minut baad phir alloo cubes mein kate hue daal lein
mix karein or halki aanch par hi pakaein
phir piaaz daal kar aik minut tak rakhein
aur phir akhir mein hari mirch kati hui aur hara dhaniya daal kar mix karke
utaar lein aur thanda hone dein

puri kay size kay baraber ya us say thora sa bari roti bail lein
motai panch rupay kay sikkay kay barabar rakhien
buhat patli patti kay samosay mazay kay nahin bantay
roti ko darmian sy kaat kar do karlein
ab golai wala hisa bahar rakh kar katay walay hisay say kon ki
tarahay morrh kar usmein samosa filling dalein aur band karlein.

itna pani dalein kah garha (magar buhat garha nahin) sa mahlool bany
aur layyee kay tor per sides chapkanay kay lye istimal karein.
ab karahi mein Tail (itna kay samosay us mein dip hosakein) darmiani teez anch per rakhien.
tail buhat gram bhi nahin ho magar thanda bhi na ho
ab do teen samosay aik saaath karahi mein daal kar fry karien.

dahi podeenay ki chatni
ya alu bukharay ki chatni
ya imli ki chatni kay saath tanawaul farmein aur lutf uthhayen.
Note: masaloon ki miqdar apnay zoq kay hisab say kam ya ziada karsaktay hein.
